STRAWBERRY BREAD | |
2 (10 oz.) pkgs. sliced frozen strawberries 3 c. flour 1 1/2 c. sugar (or less) 1 1/2 tsp. baking soda 1/2 tsp. salt 1 c. oil (vegetable) 4 eggs (can use 3) Can add 1 cup of chopped nuts if desired Drain off juice from berries and place in a cup. Sift flour, soda, salt and sugar in a large mixing bowl. Make a "well" in the center. Add eggs, oil, juice, beat 2 minutes on medium speed using an electric mixer. By hand, fold in strawberries and nuts. Pour into 2 greased and floured bread pans. Bake at 350 degrees for 50-60 minutes. |
