“HERBED PORK TENDERLOIN WITH OVEN ROASTED POTATOES” IS IN:

HERBED PORK TENDERLOIN WITH OVEN
ROASTED POTATOES
 
1/3 cup olive oil
2 garlic cloves, minced
2 tsp. dried rosemary leaves, crushed
2 tsp. dried thyme leaves, crushed
1/2 tsp. salt
1/4 tsp. pepper
2 whole pork tenderloins (3/4 to 1 lb. each)
2 1/2 lbs. new potatoes, quartered

Heat oven to 375°F. Stir oil, garlic and seasonings; coat meat with 3 tablespoons of seasoning mixture. Place in large roasting pan. Toss potatoes with remaining seasoning mixture; arrange around meat in pan.

Roast 35 to 40 minutes or until meat thermometer registers 155°F and juices run clear, stirring potatoes after 20 minutes. Broil on top rack of oven 5 minutes to brown. Let stand 5 minutes before slicing.

Serves 8.

I made this this evening in a roaster oven and it was phenomenal. The pork melted in your mouth. I only used one tenderloin, though. I used red potatoes instead and also tossed baby carrots in the oil. It was absolutely delicious.

Just made this tonight; fabulous! I did cover the pan in foil and cooked for 45 minutes and then uncovered and broiled it on low for the last 5 minutes. Potatoes and meat were perfectly cooked and perfectly seasoned. Super simple prep; will definitely prepare my pork tenderloins again this way.

This was the best! I didn't have rosemary, had to use basil instead but it still tasted wonderful. The house still smells good! I will definitely make this again.

I use a glass roasting dish for cooking. Mix the oil garlic and seasonings together in a cup or small dish, then put the mixture on the meat, then stir the remainder with the potatoes.
