SOUR CREAM SCALLOPED POTATOES 
2 qts. sliced potatoes (8 med.)
1 c. sliced onions
1 can condensed cream of mushroom soup
1 c. sour cream
1 tsp. salt and dash of pepper
1 c. Cheddar cheese

Combine soup, sour cream, salt, and pepper. Alternate in a greased casserole dish a layer of potatoes, a layer of onion, and a layer of sour cream mixture. Top with cheese. Cover with a loose tent of foil and bake in 325 degree oven for 2 hours or for faster cooking, cover and bake at 350 degrees for 45 minutes, then uncover and bake for 30 minutes longer. Serves 8 people.
