SOUR CREAM POTATO SALAD 
7 med. potatoes, cooked in jackets, peeled & sliced
1 c. Italian salad dressing
3/4 c. celery, chopped
1/3 c. green onions, chopped
4 boiled eggs, whites chopped
1 c. mayonnaise or salad dressing
1 c. sour cream
2 tbsp. horseradish mustard
Salt, pepper & celery seed, to taste

Wash and boil whole potatoes (skins on) until tender, approximately 1 1/2 hours. When done, remove from heat; let cool a few minutes before taking skins off. Pour dressing over warm sliced potatoes. Chill 2 hours. Add celery, onion and egg whites.

Mash egg yolks and mix with mayonnaise, sour cream and mustard. Fold mixture into salad. Add salt, pepper and celery seed to taste. Chill 2 hours. Makes 8 servings. Pimentos and sweet pickle relish may be added.

The BEST. This is the recipe my mother has used for over 50 years. Marinate the potatoes overnite, and assemble the salad one day BEFORE your event. Tastes even better the next day!! LOVE this one!
