SOUR CREAM POTATO SALAD | |
7 med. potatoes, cooked in jackets, peeled & sliced 1 c. Italian salad dressing 3/4 c. celery, chopped 1/3 c. green onions, chopped 4 boiled eggs, whites chopped 1 c. mayonnaise or salad dressing 1 c. sour cream 2 tbsp. horseradish mustard Salt, pepper & celery seed, to taste Wash and boil whole potatoes (skins on) until tender, approximately 1 1/2 hours. When done, remove from heat; let cool a few minutes before taking skins off. Pour dressing over warm sliced potatoes. Chill 2 hours. Add celery, onion and egg whites. Mash egg yolks and mix with mayonnaise, sour cream and mustard. Fold mixture into salad. Add salt, pepper and celery seed to taste. Chill 2 hours. Makes 8 servings. Pimentos and sweet pickle relish may be added. |
