ARKANSAS HUSH PUPPIES 
1 3/4 cups yellow cornmeal
3/4 cup flour
2 teaspoons baking powder
1 1/2 teaspoons salt
1/2 teaspoon onion powder
1/2 cup sugar
3/4 cup milk
1 egg
1 large onion, chopped fine
5 green onions, chopped
1/2 teaspoon seasoned salt, optional

Mix all ingredients well in order given and drop by spoonfuls into hot deep lard. Fry until light golden brown all over. Drain on paper towels.

Everyone loves these! They have become legend amongst my friends. My modifications: garlic granules instead of onion powder, Old Bay instead of seasoned salt and about a 1/2 teaspoon of cayenne. The last time I made these I also substituted green garlic for a couple of the green onions and it was fantastic and sweet!

I made these for my son's 3rd grade United States class project. My son had Arkansas and I found this recipe online. He and his classmates loved them. I just made my second batch and my cohorts loved them too. I used everything except the seasoned salt. You can definitely taste the sugar... yummy!

My family love these, some of the best Hush Puppies we have ever had. I have also made these and added a finely chopped and seeded jalapeno. We store any leftovers in the refrigerator and they taste great cold too.

I've enjoyed outdoor fish fries hundreds of times. My favorite food, actually. Hush puppies were almost always made using the fish breading, with suitable water and onions added, then fried in the fish flavored oil. Fine eats, I'll tell a man! But this Yankee version tastes fine, too!
