ARKANSAS HUSH PUPPIES | |
1 3/4 cups yellow cornmeal 3/4 cup flour 2 teaspoons baking powder 1 1/2 teaspoons salt 1/2 teaspoon onion powder 1/2 cup sugar 3/4 cup milk 1 egg 1 large onion, chopped fine 5 green onions, chopped 1/2 teaspoon seasoned salt, optional Mix all ingredients well in order given and drop by spoonfuls into hot deep lard. Fry until light golden brown all over. Drain on paper towels. Serving Size: 6 |

I've enjoyed outdoor fish fries hundreds of times. My favorite food, actually. Hush puppies were almost always made using the fish breading, with suitable water and onions added, then fried in the fish flavored oil. Fine eats, I'll tell a man! But this Yankee version tastes fine, too!
