HAWAIIAN CHICKEN 
2 c. cooked, cubed chicken
1 c. cooked carrots, sliced diagonally

These items can be stir-fried in 2 tablespoons peanut oil or sesame oil.

1 green pepper, cubed
1 c. pineapple juice, set chunks aside
1/4 c. sugar
1 tbsp. soy sauce
2 tbsp. cornstarch
1/4 c. water
1/2 c. vinegar

In large skillet add pineapple juice, 1/2 cup sugar and 1/2 cup vinegar, simmer until sugar dissolves. Add green peppers. Simmer until crisp and tender (1 to 2 minutes), add soy sauce and cornstarch dissolved in water. Stir until thickened. Add chicken, pineapple chunks and carrots, heat through and serve over rice.
