HAWAIIAN CHICKEN CASSEROLE 
2 oz. onion, large diced
1/2 c. tomato juice
1/2 c. pineapple chunks with juice
1/4 tsp. soy sauce
6 oz. cooked chicken
1 tsp. chopped pimento
1/2 c. chicken bouillon
1/4 med. green onion
Dash of ginger
1/4 tsp. lemon juice
Salt and pepper

Brown onions in non-stick skillet. Add bouillon, tomato juice and green pepper. Simmer until pepper is cooked and sauce thickens. Add pineapple with juice, ginger, soy sauce, lemon juice and chicken. Season to taste. Fold in pimento. Makes 1 serving.
