SCOTTISH SHORTBREAD 
1 c. butter (2 sticks), soft
1/2 c. sugar
2 c. flour

Mix the butter and the sugar very well. Slowly add the flour. You may have to use your hands. Spread into an ungreased 13 x 9 inch baking pan. Bake for 30 to 40 minutes in a 300 degree oven until lightly browned. When done, prick all over with a fork right away. Cut into small bars. Makes 36 delicious bars.
