GRANDMA'S SCOTTISH SHORTBREAD 
1 c. sugar (C & H super fine granulated) or regular sugar
2 c. butter
4 c. regular flour
1 c. Wondra enriched flour

Combine sugar, butter, and regular flour. Work with fingers until well mixed. Gradually add the 1 cup Wondra while mixing it. Cut into 3 pieces. Shape in pie dishes (9 inch). Indent around edge with a fork. Bake for 45 minutes to 1 hour at 275 degrees (no preheat). They should be golden brown when done.

Let the cakes cool about 1 to 1 1/2 hours before removing carefully from pans. Wait another 2 to 3 hours before wrapping in aluminum foil for storing in a large tin or, if you prefer, freezing. Recipe makes 3 cakes.
