This is THE BEST frosting recipe ever!! I made this for my daughters birthday - I picked it because it was so easy. The results were incredible. I almost didn't frost the cupcakes because I wanted to eat it with strawberries and anything else I could find!

Be sure to use real (liquid) whipping cream or heavy cream. Don't use whipped cream from a can.

if you have a problem whipping try using a metal bowl that has sat in the freezer for a little bit it will make a big difference.

You can also use chocolate pudding mix!

This was a perfect frosting for a layered chocolate cheesecake that I made. I made double the amount and it took about 9 minutes with the electric mixer to get it to the perfect consistency, but it was well worth it.

Wonderful recipe. I used bittersweet. chocolate chips and everyone loved the fact that the frosting wasn't too sweet. A great compliment to the sweet chocolate cake. I'll use the recipe to make chocolate cream pies from now on. FYI, I didn't use heavy whipping cream.
