SWISS ASPARAGUS | |
1 lb. fresh asparagus spears or 2 (9 oz.) pkgs. frozen asparagus 6 tbsp. butter 1/4 c. chopped onion 1 c. (4 oz.) shredded Swiss cheese 1/2 c. instant nonfat milk (dry form) 3 tbsp. lemon juice Paprika If using fresh asparagus, cook in a small amount of water, or microwave in a covered dish for a few minutes until tender. Drain. If using frozen, follow package directions for cooking except cook only 3 to 4 minutes. In a large skillet, melt butter and saute onion until lightly browned. Add drained asparagus, cover and cook over low heat 5 to 10 minutes; turn into baking dish. Toss together the Swiss cheese and dry milk powder. Sprinkle over asparagus. Drizzle lemon juice over all. Bake at 350 degrees for 12 to 15 minutes. Sprinkle with paprika. 6 servings. |
