GREEK TOMATO MINCEMEAT | |
10 qt. green tomatoes 5 c. brown sugar 4 c. raisins 2 c. beef suet (ground) 1/2 c. vinegar 1 tbsp. grated orange peel, rum or anise extract 2 tbsp. salt 2 tbsp. cinnamon 1 tbsp. nutmeg 1 tbsp. cloves (ground) 6 to 8 c. chopped apples Slice tomatoes thin or put through food chopper and allow to drain. Cover with cold water and bring to a boil for 5 minutes. Drain well. Add suet, vinegar, apples, raisins and spices. Return to fire and allow to simmer for 30 to 45 minutes. Pack while hot, and process for 15 minutes in water bath. |
