3 c. hot mashed sweet potatoes or yams
1/4 c. butter
1/2 c. brown sugar
1/2 tsp. salt
1 tsp. grated lemon peel
8 marshmallows, halved

Combine all ingredients except marshmallows and put half of the mixture in a casserole dish. Top with marshmallows. Put remaining mixture on top of marshmallows. Bake for 30 minutes at 350 degrees. More lemon may be added if desired for taste. This may be prepared ahead and frozen.
