COCONUT MACAROONS 
1 1/3 c. coconut
1/3 c. sugar
3 tbsp. all-purpose flour
1/8 tsp. salt
2 egg whites
1/2 tsp. almond extract

Mix coconut, sugar, flour and salt. Stir in egg whites and almond extract. Drop from teaspoon onto lightly greased baking sheets. Bake at 325 degrees for 20 minutes or until edges are golden brown. Remove immediately. I usually double this recipe because these are delicious!
