COCONUT MACAROONS 
1/2 c. butter (1/4 c. butter & 1/4 c. shortening)
1 c. brown sugar
1 1/2 c. Quick Quaker oats
1/2 c. shredded coconut
1 tsp. vanilla
Pinch of salt
1 egg, unbeaten

Melt 1/2 cup butter (1/4 cup butter and 1/4 cup shortening may be used). Add 1 cup brown sugar and 1 1/2 cups Quick Quaker oats. Cook 3 minutes stirring constantly. Remove from stove and add 1/2 cup shredded coconut, 1 teaspoon vanilla, pinch of salt and 1 egg, unbeaten. Beat all together and put by spoonfuls on greased cookie tin. Bake at 350 degrees for 10 minutes. Yield: 2 1/2 dozen.
