COCONUT MACAROONS 
1/2 c. egg whites (about 4 eggs)
1 1/4 c. sugar
2 tbsp. flour
2 1/2 c. moist shredded coconut
1/4 tsp. salt
1/2 tsp. vanilla

Beat egg white until stiff, gradually beat in sugar, salt, and vanilla. Blend in coconut. Drop by rounded teaspoon onto cookie sheet covered with plain paper. Bake in slow oven 325 degrees for 20 minutes. Makes 2 1/2 dozen.
