GREEN BEANS AND ONIONS
VINAIGRETTE
 
1 lb. green beans
Salt to taste
1 1/2 tbsp. parsley
2 tsp. red wine vinegar
2 tsp. Dijon mustard
3 tbsp. oil
2 med. onions, cut into rings
Ground pepper to taste

Clean and trim beans. Drop into boiling water until tender-crisp, about 4 minutes. Drain and run under cold water. With a whisk, rapidly blend parsley, vinegar, oil, mustard, salt, pepper. Gently toss onion rings and beans with sauce.
