RAISIN PIE 
2 c. raisins
1 c. sugar
2 c. water
1/2 tsp. salt
2 tbsp. butter
3 tbsp. lemon juice (I use ReaLemon)
1 tsp. lemon extract
2 tbsp. cornstarch

Cook first 6 ingredients together for 5 minutes. Dissolve cornstarch in 3 tablespoons water and add to raisin mixture. Cook another 5 minutes. Remove from heat and add lemon extract. Put into pie shell and cover with another pie crust. Bake 25 minutes at 350 degrees.
