“GARLIC MASHED POTATOES” IS IN:

GARLIC MASHED POTATOES 
2 lb. peeled and diced potatoes
1/2 to 1 head garlic cloves, peeled and mashed
6 tbsp. butter
1/2 to 3/4 cup heavy cream, half & half or milk

Cover potatoes with water sufficient to cover in a heavy-bottomed pan. Cover and bring to a boil. Reduce heat slightly and simmer until potatoes are fork-tender.

Drain potatoes and set aside. Return empty pan to heat and add butter, leaving until butter melts. In a separate pan, bring cream or milk to boil (do not allow to curdle; remove from heat immediately when it starts to boil).

Mash the potatoes, beating in the butter and half & half, cream or milk, mashed garlic, and salt and pepper, until potatoes are smooth and fluffy.

NOTE: For milder garlic flavor, parboil garlic along with potatoes, then mash with potatoes.

I peel whole cloves - and "add to the water" I am boiling my potatoes in. This not only infuses the water as potatoes cook - but at end... when you drain the potatoes... mash the cooked garlic in with the potatoes. Finish as desired... butter, half & half, sour cream, etc.,

Replace water with Chicken broth and add your garlic right in the pot with the potatoes, don't worry that you drain the broth, the flavor remains, takes this dish to a whole new level.

Wonderful!!! So easy to make. I steamed my potatoes to retain their flavor, then added 1 tsp. cumin. used EVOO instead of butter and used milk not cream. Delicious!

This recipe is really great and simple, and I have prepared garlic mashed potatoes a few times since discovering it! I've made a few of my own changes, that my boyfriend and I agree really takes it to the next level:

For a little sweetness and depth of flavor, try using half white potatoes and half sweet potatoes - this may sound strange to some, but it's ooooh so delicious, trust me!
To knock down the sharpness of the garlic flavor without losing it too much, chop each clove into 3 or 4 pieces and saute in a little olive oil before adding to potatoes. Try adding some thyme as well!
Mix in a few pinches of thyme and dill to your mashed potatoes once they're done. Yum.

For an added touch, separate garlic cloves but leave peel on and roast them in a metal cup cake baking pan with 1 tsp of olive oil mixed in for around 10 mins on 400°F.

If you boil the potatoes with the garlic the flavor of garlic cooks in the potatoes. The garlic is soft and can be mashed with the potatoes.

Consider these possibilities: 1. Chop and saute the garlic in olive oil before adding to the potatoes and then mashing. 2. Put the mashed potatoes in a buttered, oven-proof dish, and broil for a few minutes, until brown peaks form. Serve very hot.
