LEMON BARS DELUXE | |
2 c. all-purpose flour, sifted 1/2 c. confectioners sugar, sifted 1 c. butter 4 eggs, beaten 2 c. granulated sugar 1/3 c. lemon juice 1/4 c. all-purpose flour 1/2 tsp. baking powder Sift together 2 cups flour and the confectioners sugar. Cut in butter until mixture clings together. Press into 13 x 9 x 2 inch baking pan. Bake at 350 degrees 20 to 25 minutes (or until lightly browned). TOPPING: Beat together eggs, granulated sugar and lemon juice. Sift together the 1/4 cup flour and baking powder. Stir into egg mixture. Pour over baked crust. Bake at 350 degrees for 25 minutes longer. Sprinkle with confectioners sugar and cool. Cut into about 30 bars. |
