STIR FRY VEGETABLES 
This dish enhances any meat and is a good source of vitamins A and C and fiber.

1 tbsp. vegetable oil
2 carrots, sliced diagonally
2 zucchini, cut in strips
1 c. sliced mushrooms
1 lg. sweet pepper, thinly sliced

Heat oil in large skillet or Wok. Add carrots and cook 2 to 3 minutes, stirring constantly. Add zucchini, mushrooms and pepper. Continue to stir fry 3 to 4 minutes longer until vegetables are tender, yet crisp.
