QUICHE 
1 deep dish unbaked pie shell (9 inch)
1 egg yolk
1 tsp. water
2/3 lb. Italian sausage, sliced (1 pkg. frozen chopped broccoli may be substituted)
1/2 c. chopped onion
2 tbsp. all purpose flour
4 eggs
2/3 c. half and half or evaporated milk
2 c. cheese - Monterey Jack and/or cheddar
Chopped parsley

Pierce pie shell allover with fork. Beat egg yolk with water and brush shell with mixture. Bake at 400 degrees for 15 minutes or until partially brown.

Put sausage and onion into skillet. Cook over medium heat until meat is browned and onion is limp. (If broccoli is used, boil just until firm.) Stir in flour.

Beat eggs with half and half or milk. Set aside. Sprinkle half the cheese into bottom of pie shell. Top with sausage or broccoli mixture, then with remaining cheese. Pour egg-milk mixture in; sprinkle with parsley. Bake at 375 degrees for 25-30 minutes or until set.
