MICROWAVE CHEESE AND BROCCOLI
QUICHE
 
1 (10 oz.) pkg. frozen chopped broccoli
1/2 tsp. crushed dried basil
1 c. shredded Swiss cheese (4 oz.)
1/4 c. butter
1/4 c. all purpose flour
1/2 tsp. salt
Dash pepper
1 c. milk
4 egg whites
4 egg yolks
1/4 tsp. cream of tartar

Prick broccoli, package in several places. Place in microwave oven. Cook on high for 4 minutes. Drain well; set aside. Melt butter on high power for 45 seconds to 1 1/2 minutes. Stir in flour, salt, pepper and seasonings. Stir in milk. Micro-cook, uncovered on high power for 3 to 5 minutes or until bubbly, stirring every minute. Stir in cheese until melted. Stir in broccoli.

Beat egg yolks slightly. Slowly add to vegetable mixture, stirring constantly. Using clean beaters, beat egg whites and cream of tartar until stiff peaks form. Fold into vegetable mixture. Pour into ungreased 8" x 1 1/2" round microwave dish for 18 minutes on 50% power. Serve immediately. Makes 4 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
