CHEESE AND BROCCOLI QUICHE 
1 unbaked 8 inch pie shell
4 slices bacon, diced
1 sm. onion, chopped fine
1/2 c. cubed Swiss or Monterey Jack cheese
Nutmeg (optional)
1/2 c. chopped, cooked broccoli
4 eggs
1 tbsp. flour
Salt to taste
1 c. milk, cream or evaporated milk

Fry bacon until crisp. Add onions, saute until transparent; drain. Sprinkle bacon and onions in bottom of pie shell. Add cheese and broccoli.

Beat together eggs, flour, salt and milk until well blended. Pour into shell. If desired, top with sprinkling of nutmeg. Bake at 350 degrees for 35 to 50 minutes until golden brown and knife inserted in center comes out clean.

Chopped cooked spinach or other green vegetables can be substituted for broccoli.
