MOCK BROCCOLI - CHEESE QUICHE 
2 eggs or egg substitute
1/4 c. milk
1 lb. cottage cheese
1/2 c. onion, finely chopped
1/2 tsp. salt
10 oz. pkg. frozen chopped broccoli
8 oz. shredded Mozzarella cheese
1 c. carrots, finely grated

Thaw broccoli and press out water. Mix all ingredients together in large bowl. Pour into a deep greased pie dish (10 inches) or quiche pan. Bake at 350 degrees for 1 hour or until golden brown and set. Wait a few minutes before slicing. NOTE: My favorite cottage cheese is the "cream-whipped" type.
