1 lg. box sugar free instant vanilla pudding
1 c. coconut
1 pie shell, baked

Follow the pudding directions on the box of pudding and coconut; mix well and pour into baked pie shell.

NOTE: Add 2 bananas for a coconut banana cream pie. Also top with heavy cream whip topping.
