HONEY BRAN MUFFINS - NO CHOLESTEROL | |
1 c. unsifted whole wheat or all-purpose flour 2 tsp. baking powder 1 tsp. salt 1/2 c. raisins 2 egg whites 1 c. skim milk 1 c. whole bran cereal 1/3 Mazola corn oil 1/4 c. honey Mazola No Stick corn oil for spraying muffin cups Spray 12 (2 1/2 x 1 1/4 inch) muffin cups with cooking spray. In large bowl stir flour, bran cereal, baking powder, salt and raisins. In small bowl stir egg whites, milk, corn oil and honey, until well blended. Stir into flour mixture just until well moistened. Let stand for 3 minutes. Spoon into muffin cups. Bake at 400 degrees for 15 to 20 minutes or lightly browned. Top with Mazola butter or Mazola light spread. Each muffin provides 150 calories, 3 g protein, 23 carbohydrate, 4 g polyunsaturated fat, 1 g saturated fat, 0 cholesterol and 220 mg sodium. |
