HONEY GLAZED BRAN MUFFINS 
GLAZE:

1/2 c. butter
1/2 c. white sugar
1/2 c. dark brown sugar
5 tbsp. honey

MUFFINS:

3 c. raisins, dates or prunes, pureed in food processor
1/2 c. honey
1/3 c. oil
3 lg. eggs
2 c. buttermilk
1 c. Miller's bran
3 c. flour
2 1/2 tsp. baking soda
1 1/2 tsp. salt

GLAZE: Cream butter with sugars until light and fluffy. Beat in honey and 3 tablespoons boiling water. With brush, coat bottom and sides of muffin tins.

MUFFINS: Mix fruit puree, honey and oil until smooth. Beat in eggs, then buttermilk and bran. Sift flour, baking soda and salt and add to mixture. Beat until just combined. Fill tins 3/4 full.

Bake at 375 degrees for 20-25 minutes until springy to the touch. Let muffins cool for 2 minutes and invert on rack to cool completely.
