2 tbsp. salad oil 1 1/2 lb. sirloin steak 1/4 c. sugar 3/4 c. soy sauce 1/4 c. water or mushroom stock 2 med. onions, sliced thin 1 green pepper, sliced in thin strips 1 c. diced celery (1 1/2" strips) 1 (1-12 oz.) can bamboo shoots, sliced thin 1 (8 oz.) can mushrooms 1 bunch green onions, chopped in 1" lengths with tops Slice steak in thin diagonal slices 2" x 1/2". Heat oil in wok or skillet, add meat and brown lightly. Mix sugar, soy sauce and mushroom stock, and add half of this to meat. Push meat to one side of pan and add onion, green pepper, and celery. Cook a few minutes. Add remaining soy sauce mixture, bamboo shoots and mushrooms. Cook 3 to 5 minutes and add green onion and tops. Cook one minute more; stir well and serve immediately. Makes 6 to 8 servings. |
