SCALLOPED POTATO CASSEROLE 
4 to 6 med. potatoes
1 sm. onion
2 tbsp. butter
1/4 c. milk
2 tbsp. flour
1/4 lb. ham
Salt and pepper to taste
Large casserole dish

Chop onion, slice potatoes and cube ham (1/4 inch cubes). Butter casserole dish and place 1/3 of the potatoes in the bottom of the dish. Salt and pepper and spread a tablespoon of flour over them. Scatter 1/2 the onions and ham and put dots of butter around the potatoes. Make a second layer the same as the first and then top it off with the last 1/3 of the potatoes and pour the milk over the top. Cover the dish and bake in a 425 degree oven for 45 to 50 minutes with it uncovered the last 15 minutes of baking. Will feed four.

Variations: Leave out the ham and place four seasoned pork chops on the top after adding milk. Use skim milk, turkey ham and butter buds vice whole milk, pork ham and butter.
