GRILLED TOMATOES & CHEESE 
2 lg. tomatoes
4 oz. shredded mozzarella cheese
2 tbsp. oil
1/4 tsp. oregano
1 sm. garlic clove, minced

Cut each tomato into 4 slices (or whatever thickness you desire). Place slices on baking sheet. Sprinkle with cheese. In a cup, stir oil, oregano and garlic. Drizzle oil mixture over tomatoes. Broil 3-5 minutes until cheese melts and is lightly browned.

To Serve: Line platter with lettuce, top with tomatoes. Makes 4 servings, about 155 calories each serving. So easy and nice change for all those summer tomatoes!
