TUNA - RICE CASSEROLE 
2 tbsp. minced onions
2 tbsp. minced green pepper
1/4 c. butter
2 tbsp. flour
1 tsp. salt
2 1/4 c. milk
2 c. grated sharp cheese
1 can tuna
3 c. cooked rice
3 hard cooked eggs, sliced

Cook onions and green pepper in 3 tablespoons of butter until soft, but not browned. Stir in flour and salt. Add milk and stir until smooth. Cook until thickened, stirring occasionally. Add cheese and stir until melted. Fold in tuna and rice.

Alternate layers of tuna-rice mixture and eggs in buttered 1 1/2 quart casserole, ending with eggs. Dot eggs with remaining 1 tablespoon of butter. Bake at 350 degrees 20-30 minutes. Garnish with sliced pitted ripe olives.
