TUNA - RICE CASSEROLE
(Microwave)
 
1/4 c. chopped onion
1 med. green pepper, chopped
6 tbsp. butter
2 c. cooked rice
2 (7 oz. each) cans tuna, drained
1 (10 3/4 oz.) can cream of chicken soup
1 (10 3/4 oz.) can cream of mushroom soup
1 (4 oz.) can sliced mushrooms, drained
1 (2 oz.) jar pimentos (optional)
Salt to taste

1. Combine onion, pepper and butter in 2 quart casserole. Cook, covered, on full power for 3-5 minutes or until onion and pepper are tender.

2. Mix in rice, tuna, soups, mushrooms and pimentos, if desired. Season with salt, as desired. Heat, covered, on full power for 7-10 minutes or until heated through.

Since microwave ovens vary in power, you may need to adjust your cooking time.
