2 MINUTE SPAGHETTI SAUCE
This is the easiest and fastest spaghetti sauce because it is not cooked. Excellent also as a dip for cocktail parties, to season soups, etc.

4 large ripe tomatoes
2 garlic cloves
1/2 cup olive oil
1 1/2 tsp. dried oregano flakes
1 tbsp. tomato paste
salt
pasta (enough for 4 persons)

Process the olive oil and garlic cloves in a blender then add the tomatoes cut in cubes (unpeeled and with seeds) and the tomato paste until a smooth sauce is obtained, adding the dried oregano the last seconds before shutting off the blender. Add the salt to taste.

This sauce is added to the pasta just after it is drained and still very hot. You may microwave the sauce to make it hotter. The quantities of the ingredients may vary according to your taste.

Very fast and simple, but really flavorful!!

Since microwave ovens vary in power, you may need to adjust your cooking time.

2 Minute Spaghetti Sauce

I found this to be a great starter for a spaghetti sauce. I did not use the olive oil or the tomato paste (since I didn't have any) and I added a small jalapeno and some italian seasoning, celery salt and paprika. I did cook it on medium high for 15 minutes to reduce the water content, then served it over spaghetti squash! Just play with the seasonings to achieve the correct flavor.
