BUBBY'S HOMEMADE SPAGHETTI SAUCE
1 (28 oz.) can ground peeled tomatoes
1 (15 oz.) can tomato sauce
2 (6 oz.) cans tomato paste
2 lg. white onions, peeled
3 cloves garlic, peeled
1 tbsp. oregano
1 tbsp. parsley flakes
Olive oil

Finely dice onions and garlic together. In a large saucepan, put in enough olive oil to cover bottom of pan and add the onions, garlic, oregano, parsley flakes and saute in oil being careful not to burn.

When onions become transparent, stir in the rest of the ingredients and simmer for 2 hours. Stir sauce occasionally with a wooden spoon (metal spoons will leave a metallic taste to the sauce). Serve over favorite pasta. Makes 8 servings.

Absolutely delicious! I can't wait to try mixing it up with different ingredients. I made my first batch with sliced mushrooms and fresh parsley instead of dried. Next time, who knows? Crushed red pepper flakes and extra garlic? Diced tomato & basil? Parmesan cheese? This recipe is perfect for improvisation.

I added two teaspoons of Italian Seasonings to this most excellent sauce. We enjoyed it with Italian Sausages.
