MAIN STREET CHICKEN SALAD 
2 c. cubed cooked chicken
1/4 c. sliced water chestnuts
1 c. seedless, green grapes, halved
1/2 c. chopped celery
1/2 c. toasted slivered almonds
3/4 c. mayonnaise
1 tsp. curry powder
2 tsp. soy sauce
2 tsp. lemon juice
1 c. pineapple chunks (garnish)

Combine chicken, water chestnuts, grapes, celery and 1/4 cup almonds. Mix together mayonnaise, curry powder, soy sauce and lemon juice. Add to chicken mixture. Chill. Sprinkle with remaining almonds. Serve on lettuce leaf with pineapple.
