PASTA CON LE SARDE (PASTA WITH
SARDINES)
 
This sauce is used on Saint Joseph's Day 3/19 and Christmas Eve.

3 medium onions, chopped
3 tbs. olive oil
2 (2-ounce each) cans anchovies
1 (6-ounce) can tomato paste
18-ounces tomato puree
1 (15-ounce can tomato sauce
2 1/2 cups water
1 (14-ounce can cuoco seasoning for macaroni with sardines (can be found in Italian markets or online
4 or 5 basil leaves chopped or 1/2 tsp. dried
salt and pepper, to taste

In heavy saucepan, saute onions in oil until translucent; add anchovies. fry slowly. Add tomato paste, puree, sauce, water, salt, pepper and basil Simmer uncovered on moderate heat for one hour Add undrained can of Cuoco Sarde Sauce, cover and continue cooking over moderate heat another hour until thick.

Serve over pasta.
