1/2 lb. bacon 1 (2 lb.) pkg. frozen hashbrowns 1 lb. Velveeta cheese 2 c. mayonnaise Slightly defrost potatoes (about 15 minutes). In heavy saucepan, over low heat, melt cheese, stirring constantly. Combine the melted cheese, mayonnaise, and potatoes in a large mid-size bowl. Transfer to large, shallow baking dish and top with crumbled bacon. May be made in advance to this point and refrigerated or frozen until needed. Bake uncovered at 350 degrees for 30 to 40 minutes or until bubbly and golden brown. If baking directly from freezer, increase baking time to 1 hour. |
