CRAB MEAT AND ARTICHOKE SOUP 
1 lb. crabmeat
1 lg. onion, chopped
1 lb. butter
2 stalks celery, chopped
3 sm. cans artichoke hearts
1 gal. water
2 bay leaves
8 oz. flour
1 tbsp. chicken base
Dash salt and pepper
Dash thyme

Saute onions, celery and butter together for 5 minutes. Add flour and cook for 5 minutes. Add water, hearts of artichoke, salt, pepper, thyme, chicken base and cook for 45 minutes. Add crabmeat and simmer for 10 minutes. Serves 20 people.
