CALICO POTATO PANCAKES 
3 potatoes, peeled
3 eggs
1/2 c. flour
1/2 c. shredded carrots
1/4 c. green onion, chopped
1 tsp. salt
1/4 tsp. garlic powder
1/4 tsp. pepper
Oil for frying

Coarsely shred potatoes. Place in water to prevent discoloration. Drain and pat dry. Add remaining ingredients except oil. Mix. Heat 1 tablespoon oil. Drop potato mixture by rounded spoons and flatten. Fry 2-3 minutes per side. Keep warm. Repeat, adding oil as needed.
