POTATO-ONION PANCAKES 
4 med. potatoes
2/3 c. shredded Swiss cheese
Dash black pepper
1/3 c. melted butter
1 med. onion
1/2 tsp. salt
Dash ground nutmeg

Peel potatoes. Peel and chop onion. Shred potatoes hair fine julienne. Drain well on a towel. Mix potatoes, onion and cheese. Add salt, pepper and nutmeg. Heat part of butter in pan. Spread and press part of mixture into pan in a thin layer. Cook until bottom is brown. Loosen edges with spatula. Turn and brown other side. Repeat with remaining mixture.
