SWISS ONION POTATO CAKE 
1 c. chopped onion
2 tbsp. butter
2 lbs. frozen hash brown potatoes
1/2 lb. grated Swiss cheese
2 eggs, beaten
1 c. milk

Saute onions in butter until transparent, about 7 or 8 minutes. Add potatoes, cheese, salt and pepper. Spoon into a greased 9x13 dish or pan. Beat eggs and milk and pour over potato mixture. Bake at 350 for 25 to 30 minutes, until golden brown and crusty. Cool 5 minutes before cutting. Makes 8-12 servings.
