CHICKEN DELIGHT 
6 chicken breasts (boneless)
1 tbsp. pepper
1 tsp. salt
1/4 c. cooking sherry
1/4 c. butter
1 lg. can artichoke hearts
1 lg. can mushrooms
1 1/2 c. rice
1/2 c. water

Saute mushrooms and artichokes in butter and cooking sherry. Brown chicken breasts. Put rice and chicken in casserole dish. Add pepper, salt, and 1/2 cup water to mushrooms and artichokes. Mix well and pour on top of chicken and rice. Bake at 375 degrees for 1 hour.
