ZUCCHINI CASSEROLE 
6 c. zucchini, diced
1/4 c. onion, chopped
1 can cream of chicken soup
1 (8 oz.) pkg. Stove Top stuffing
1/2 c. butter, melted
1 (8 oz.) sour cream

Cook zucchini 3 to 4 minutes in microwave. Drain into another bowl. Combine soup and sour cream. Pour over zucchini and onion. Combine stuffing mix and butter. Spread half of stuffing in 2 quart casserole. Spread with vegetable mixture. Top with remaining stuffing. Cook 8 to 10 minutes, full power.

Since microwave ovens vary in power, you may need to adjust your cooking time.
