SCALLOPED CORN 
1 lb. 1 oz. can cream corn
1 egg, well beaten
1/4 c. finely chopped onion
1/2 c. buttered Ritz cracker crumbs
1 c. milk
1 c. cracker crumbs
3/4 tsp. salt
Dash of pepper

Heat corn and milk. Gradually stir in egg and add 1 cup cracker crumbs, onion, salt and pepper. Mix well. Pour into 8 inch round greased baking dish. Top with buttered Ritz cracker crumbs. Bake at 350 degrees for 20 minutes. Yield: serves 6.

This recipe was fantastic. I used 1/4 cup heavy cream and 3/4 cup milk in place of 1 cup milk.
