JEFF'S CORN AND SEAFOOD SOUP | |
2 cans cream mushroom soup 2 cans cream shrimp soup 2 onions, finely chopped 1 c. green shallots, finely chopped 2 bell peppers, finely chopped 2 cans diced tomatoes 2 cans tomato sauce 2 cans creamed corn 2 cans whole kernel corn 1 lb. each shrimp and crawfish 3 large potatoes, diced 3 fish fillets, cubed 1 smoked sausage, cubed 1 pkg. frozen okra 1 pkg. frozen scallops 1 c. cooked rice Saute onions and shallots in cooking oil. Add bell peppers, tomato sauce, diced tomatoes, corn and soups. Cook until desired consistency. Add shrimp, crawfish, fish, sausage, scallops, okra, potatoes and rice. Add seasonings (salt, pepper and Cajun seasoning salt to taste). Cook 15 minutes or until seafood and sausage are done. This recipe can be divided in half for smaller amount. |
