SOUTH OF THE BORDER CORN 
1/2 c. thin strips cooked ham
3 green chilies, halved and seeded
1 clove minced garlic
2 tbsp. oil
1 (12 oz.) can whole kernel corn, drained
1 (15 oz.) can tomatoes, drained and chopped

Stir fry ham, peppers, and garlic in hot oil over medium heat. Add corn, tomatoes, stir fry 3 minutes until most of liquid is evaporated. Makes 4 servings.
