CARROT COOKIES 
1 c. sugar
2/3 c. shortening
1 egg, well beaten
1 c. finely grated raw carrots or pulverized cooked
2 c. flour
1 tsp. baking powder
1/4 tsp. salt
1 tsp. vanilla

Cream shortening and sugar. Add egg and vanilla. Add sifted dry ingredients and carrots. Drop onto greased cookie sheet and bake about 12 minutes at 375 degrees.

FROSTING:

3 tbsp. orange juice
3 tbsp. butter
Powdered sugar

Mix orange juice and butter. Add enough powdered sugar to make thin icing. Drop onto HOT cookies. Freezes well.
