HONEY CARROT COOKIES 
2 c. flour
1 tsp. baking powder
1/4 tsp. baking soda
1/2 tsp. salt
1/2 tsp. cinnamon
1/2 tsp. nutmeg
2 c. quick cooking oatmeal
1 c. raisins
1 c. chopped nuts
1/2 c. shortening or butter
1 c. honey
2 eggs, well beaten
1 c. grated carrot

Preheat oven to 350 degrees. Grease baking sheets. Sift flour. Measure again, then sift with baking powder, baking soda, salt, cinnamon and nutmeg. Add oatmeal, raisins and nuts. Mix well.

Cream shortening and honey, blending thoroughly. Add eggs, then carrot. Beat well. Stir in dry ingredients. Blend thoroughly. Drop by spoonful on baking sheet. Bake is preheated oven 12 to 15 minutes.
